What size brisket is best for a competition cook? Do y'all have a preference?

You're about to get a range of answers on this one. But to me anything 12 lbs and above is good to go. Comp cooks generally buy the same size briskets every time for the consistency of cook times, but to me there is no best size. My preference for competition is in the 13-15 lb range.

One big enough to get your needed slices from? I would say the 12-15lb range is what i been looking at.

I agree with the above posts, 12 to 15# packers, leaning more towards the 15 than the 12. I like the bigger ones unless you find a 12 pounder or so with a killer flat.

Usually get a 10 pound packer and cut out the flat and pretrim to 4 or 5 pounds. Flat is nice and uniform around the edges that way. Or sometimes just buy a flat if we can find a good one.

I always go with a CAB flat in the 5 to 7lb range.

I prefer a full packer personally, I've tried flats and maybe it's just in my head but the packers seem to come out a lil juicier. I like about a 12 lb brisket, by the time I'm done trimming it's prolly pretty close to 10 lbs. As Allen stated it's all personal preference, if I recall correctly Myron Mixon says he prefers them 15+... In his theory the bigger the brisket, the older the cow, the more fat content it tends to have.

16-18 lb packer if I can find one. Got a whole freezer full of prime and cab but they are all around 12-14. They were a little small this year.

Lol since I have gained weight due to good BBQ and COLD BEER I get heartburn from anything. But to loose 40 lbs or so. So yeah I gotta take it every day. Lol the funny thing is I grill all my chefs choice entries with kingsford and win a lot. I use strictly B&B for my tastes
