Rosenberg... whos there?

Any of you guys cooking @ Rosenberg this wkend cooking the IBCA event?? Might be making a trip out with Allend23 to judge. If anyone is there we may drop by and introduce ourselves.

Yes... Allen, myself and my cooking partner judged final table brisket. First time any of us had ever done it.

I would call it educational. I will say that in order to get a call your brisket needs to taste good when its cold and it needs to retain moisture. Most of the brisket tasted pretty much the same.

... not to mention appearance to me doesnt count for much past the first table. Judging final table it was mangled by the time we go to it.
