Rubbed this bad boy down last night with Hog Waller.....injected it this morning with a cup of apple cider vinegar, can of apple juice concentrate, three teaspoons each of onion and garlic powder.
On the smoker at nine this morning
Actually to be honest besides a chicken or two on the Weber kettle this is the first thing I've ever smoked.
Wish me luck as I do not have much faith in the Brinkman I'm using.....I so want a UDS

Just keep your temp steady and pull it off when the bone wiggles loose. You'll do fine, pork butts are pretty forgiving

Keeping the temp steady is the thing.....though I did mod it like a uds with three one inch vent holes close to the bottom two that can be capped and one with a valve as well as about 40 half inch holes in the charcoal tray for better air flow.

This works well also, I was worried about be able to cook when it got cold.....didn't have the wood for my COS...this took care of it....

Wrap it! That will keep the juice in and cook more evenly. Once you get your bark/smoke ring, you're just cooking afterwards. I've finished briskets and pork butts in the oven after being on a smoker for 4-5 hours for the same reason.

trust me, them babies will hang, and cook awesome.....Most I have done is 1 brisket and 2 pork shoulders, at the same time...also done 2 briskets, then just laid on the rack eventually to get the bark I wanted...with 2 hooks, it works well
