These boxes landed me a GC at Festival of Lights in a field of 60.

I agree! Chicken has been my problem from DAY 1!!! I just cant seen to figure it out.

It wasn't our best entry by far because we rushed and almost didn't make turn-in, and were exhausted from the 107deg heat at Bedford in September, etc., but our ribs tasted great. My rub guy swirled 'em on, put 'em in the cooler, and when he got 'em out he didn't smooth 'em out before he put 'em on. So they had stupid ridges and weren't smooth and pretty...lol. Anyway, one of few pics I've been able to find, for some reason.

Not sure what i was doing here now that i see this pic lol..I now slice most the brisket and then select the pieces closest to the point and clean up the fat

Why is it just one of you garnishes and the rest are just foil in the box?
Thank You to all the fine folks here for all the tips and advice so I can now smoke a chunk of meat and folks actually eat it.

Thanks I didn't think about that. Guess I watch tv cooking shows more than I should.

Actually, that's some great crust on the brisket, but I reeeeally like those rib racks! Great stuff, and I'm sure they were raved over :salut:

Id be interested in seeing an IBCA pulled pork turn in box. I understand that you're allowed to add sauce/rub after cooking pork, but I imagine there's a limit to that

I've never seen an IBCA comp have pulled pork as a turn in item.

I have never seen it in IBCA either, but I have in LSBS. No pics though...
