A texture shot and also the links. The longer ones were about 4 to 5 pounds each. They turned out great. I had some heat blistering from reflected heat from the sides, because I placed them too close. Lesson learned. Otherwise, maybe the best I've ever made.

I sliced this super thin and made a po'boy out of some of it. It was great! I did a pot of red beans last night. I think I'm about to get kicked out of bed.

More of the famous sancho sausage! My aunt recently bought some packaged andouille for some red beans and rice she was making. She never had it before so she wasn't expecting the kick it contains. Lol! This will be a project for me since I've never made any and I told her I would put it on my to-do list!
