Purpahura engineered this masterpiece. It's made from a commercial warming cabinet. We replaced the heating element and then fabricated this control face for the thermostat, thermometer, and pilot light. It holds temperature perfectly. The heat deflector causes the element to burn longer to maintain temperature which keeps the wood chips burning longer at lower temps and also evens the cooking temps where the meat is at higher temps. This is absolutely perfect.

looks really good, can you tell me, cause I'm still learning... or trying to what are you meaning about the perfect temperature? 160 or are you starting at 140? and then turning it up as time goes by? Thanks and looks like a good smoker for cheese and other things also...

hey, thanks! ST, by perfect temps, I mean it holds what ever temperature you set it on with a degree or so one way or the other. If I put it on 120, that's where it stays. If I crank it up to 140 from 120 it doesn't go to 150 and then cools back down -it goes to about 141 and then maintains. It's just as accurate at 120 as it is at 160, or even hotter. It's a very well engineered smoker.

I haven't had a chance to smoke with it yet! I got a new gate-opener/lawn-mower for Christmas and I've been too busy playing with it to have much time for anything else. Here's the pic:

Well, CF shamed me into smoking. Here's some wild hog kielbasa. It turned out really well. It's drying in the smoker now after I took it back down to 90 in an ice bath. Thanks for the congrats. I can't believe I waited until I'm 39 to pull this baby-having stuff, but it's sure been great. I'll throw in a shameless baby pic at the end because, well, I'm as proud as heck.
