CF, your hot links looked so good, thought I better try some. Did 14 pounds. Got them stuffed and they're hanging to dry right now. Thanks for the recipe.

Mark, hope they turn out for ya. Recipe is from the internet, course I had to change it up a little. Man, you got them looking good. Am I seeing that you tie and don't twist your links? As i said I need to hone up on my stuffing skills.

CF; I twist mine for the most part. But when you hang two or more, the bottom ones seem to spin, so after I hang them, I'll tie the ones that want to come undone. And you're right about personalizing, got to do that. Haven't made any Creole Chaurice sausage yet. It's on the horizon. I did find what appears to be a good recipe for it.

It's all pretty much standard, start at 130 and slowly bring it up to 170, and pull at 154 internal.

Thanks..........Do you ice bath it at final temp and do you smoke it over several hours? Like three to four?

I ice bath everything. I also cook to a temperature, not time. The amount of smoke I apply is relative to what I'm cooking.
