And they are almost gone already, kids hit the freezer.
Almost 20 pounds before smoking. Fun project with my son helping me. They taste good. I do need to hone up on my stuffing skills. CF

Man, those look great! When you say Texas hotlinks, would you consider them more to the Texas red hotlink taste or the Pittsburg hotlink? There are a couple of schools on those tastes and I've been wondering. I love a good red hotlink. I like Pittsburgs, but less so now that I'm 40. I have a son on the way, and I can't wait to get him old enough to start making and smoking sausages. Good job!

Thanks guys, Sancho, my opinion is almost all store bought sausages have so much filler they have very little taste. But then again we don't have any market that makes there own sausage. I used to like Earl Campbell hot links but over time they have become just another sausage. I also like Pittsburgh's links but have cut back because of the fat content. The recipe I used came from the internet. I can post it if you like.

CF, I'd love the recipe. I'm always trying to learn. I wouldn't worry about being old, you have a better chance of being older than you are than I do... simple math.

Oh! Earl Campbell's was the best for a long time, and I suppose they still are among store-bought's, but I agree they're not what they used to be. Have you ever tried Smokey Denmark's from Austin? Their hot links are what hot links ought to be.

Never tried those, course where I live we have Wal-Mart ant that is about it.
Recipe I used:
Genuine Texas Hotlinks
5 pounds Boston butt
2 pounds lean beef
1 bottle ice cold beer
2 tablespoons ground black pepper
2 tablespoons crushed red pepper
2 tablespoons paprika
1 tablespoon cayenne pepper
1 tablespoon minced fresh garlic
1 tablespoon granulated garlic
2 teaspoons ground coriander
1 teaspoon kosher salt
1 teaspoon ground bay leaves
1 teaspoon whole mustard seeds
1 teaspoon sugar
2 teaspoons ground thyme
6 teaspoons Morton's Tender Quick
Mix all the spices, cure, and garlic into the beer and place in refrigerator while you cut up the meats into grinder sized pieces. Pour the spiced beer on the cut meat and mix it up good. Run spiced meat mixture through the grinder coarse or medium plate and stuff into medium hog casings. Smoke or slow grill till they are done
