What is this Tender Quick yall speak of. Cheater smoke ring maker? I think if you trim the fat off the brisket and the ring will go all the way around. Especially if you use a water smoker.
That is some nice looking brisket either way....good job.

Tender Quick is a Morton Salt Company product similar to Cure #1 (pink cure) except it is pre-mixed with salt. It is not as powerful -You need more of it per pound to cure meat. For more info on curing salts ping Papa Tom, our in house expert on all things cured.
