oak by itself isnt all that great IMO. the times I smoked with oak, it left a bitter taste on the meat. maybe i did something off, but the flavor of oak wood is a turn off

Depends on my cook. Beef: Mesquite. Chicken: Pecan/mesquite, Pork: Hickory/pecan. I'll use some apple or cherry from time to time if I have any and throw that with my hickory/pecan mix. Sometimes on chicken, i'll use straight pecan or mesquite. Beef, I rarely EVER mix anything with mesquite. I think mesquite alone is perfect for beef, especially burgers. Brings out the beefiness without making it taste like "BBQ".

I use oak 90% of the time. I have a bigger smoker, not to mention it's an offset design, so I need a hotter burn but Mesquite is too smokey and too harsh on a smoker of bigger size. Especially if it's green (so I've heard). You can buy bags of Apple, Cherry and Peach wood at Academy Sports stores around the area. Reasonably priced too.

I went to Academy today the have the chips for my electric in apple, orange, pecan, hickory, and jack danials oak barrell. They have the pellets in hickory misquet and some sort of mix. Then they have a bunch of bags of wood chunks.
Thank You to all the fine folks here for all the tips and advice so I can now smoke a chunk of meat and folks actually eat it.

I purchased apple at academy in lewisville a while back. It was quite a bit more expensive than the oak. Since I was using it as an accent to my oak base I didn't mind. Smelled great cooking and added a nice flavor to pork and chicken.
