Came across a recipe for Texas Smokies. Letting them dry before the smoker.

Got them in the smoker, and will start the smoke in about 2 hours.

Got the smoke rolling to the Smokies now. http://www.deejayssmokepit.net/; is the site I found the recipe. He has an e-book free download of more than 150 sausage recipes.

I was very happy with mine, so were the people that bought them. There's another recipe on there for Hill Country Sausage. Didn't care for the way it turned out.
