Jalapeno sausage

I want to try my hand at smoking jalapeno sausage like they have in the restaurants. I have two questions: What is the best type to buy for smoking and how to smoke it. :lol:

I like Southside Market from Elgin, If you can't find them Central market at HEB is Very close. I put it on at 275 for 30-40 min when You see it has some color and the casing is plumped up pull 'em off and Scarff 'em down with a cold Shiner

Thanks! I will have to give them a shot! I also have to try Shiner. I'm new to Texas and never heard of it until I moved here. I thought everyone in Texas drank Lone star beer. :texas:
