So far, been using an electric knife...just easier that way.

Ditto on the electric knife...use it for ribs and brisket.
As far as comp supply list, here is one that was posted a few weeks back...and good luck.

I also use an electric knife. The Smokin' Guns website has a comp supply list too.

I use a 12" slicing knife. Tried the electric ones, not a fan. Can't beat a sharp slicer...but that's just me. Plus, with my luck something would happen and I'd have no power, so again, just a regular knife is good to have.

This is what I use. No complaints so far. Not a fan of electric knives. http://www.amazon.com/gp/aw/d/B0000CFDB ... mdp_mobile

I was using an electric but recently changed back to my 12" slicing knife it works well when the brisket has had time to rest but if I am pressed and a short rest I use the electric.

Cusinart CEK 40 here as well. They stand behind their product as well. They sent me a brand new knife after I found cracks in the shaft almost 18 months after purchase.
Good food, good friends and good times. The very best bbq, from us to you.
