It's nearing 2 hours into the smoke. Don't laugh at my makeshift heat deflector in the center there lol. I gotta make due with what I got, and it's workin' so far!! I have to say this: I thought it was challenging keeping steady temps between 350 and 375; nosiree.. It is been extremely challenging to keep my temps here between 175 and 225 for this.. I'm adding a couple small pieces of hickory and pecan about every 20 minutes or so. Just enough to keep the coals from dying out totally, but not too much as to prevent getting too hot.. :banghead:

Try some Apple next time. Now that is good. I like Hickory too.
Mama's gonna be p/o-ed cause you used her new biscuit pan. :violent:
I cold smoke mine with an AMNTS for about 14 hours, give or take.
Never over 75 degrees.

Ha! Mama believs the biscuit pan to be "lost in action" as of 2 weeks ago :laughing7: I bought her a new one not long after it "disappeared". She saw the bacon a bit ago and didn't even snap that her pan was my deflector lol. Thanks all! Bludawg, absolutely! This is what I believe queing and smoking is all about. Cypertj, anytime you're in the san antonio area, I usually try to keep about 1 or 2 pounds of homemade bacon in stock, hit me up! Jarhead, I am currently trying to design a cold smoker just for the bacon and sausage. Matter of fact, it is using my current grill too. When I finally get around to building my UDS, I am making this one my cold smoker. At least, that's the plan anyways lol

Half slices! Easier for the slicer to cut this way. Plus it makes them perfect size for BLT sammiches! They're about 1/8" thick, maybe a tad less. Fried some up, almost no shrinkage at all. Perfect!

Great looking bacon! Love the thick slices, reminds me of how my Dad used to slice his.

Thanks! I grew up without a father, and most times, without my mom as well. She has recently passed and at her memorial, we had a get-together cookout. My family had compared me with my grandfather in the aspect of cooking and such. He was really big on BBQ and charcuterie. I was very young when he had passed, and it had dawned on me that it's not just a craft that's passed down by teaching, it's an inheritable trait!

Sweet!! Looks great. BAcon has been on my list for awhile. Just found a source of pork belly so hopefully soon.

man oh man I vote Dragon for the Kingnator of Bacon and do away with one of those sissy food groips like fruits and slide bacon in

I used to get mine from a meat market closer to me, but they went sky high on their prices; near 4 dollars a pound on belly. My brother frequents an asian specialty market about 20 miles from where I live where this is bought for 2.49 a pound, all day long!

:king: haha! Thanks, but I don't know if I could fully live up to that. I would be happy about making bacon one of the food groups! Not just meat group; there's meat, then bacon, then other stuff.. Yeah!
