25 pounds of kielbasa in the smoker. These are stuffed in 35mm natural hog casings. I bought the casing from Alliedkenco in Houston and they're the best and cleanest casings I've ever used. Same for the 55mm beef middles I ordered from them. Fast shipping and a competitive price.

it's just a standard Kielbasa recipe. For 5 pounds of mixed meat, and I use 100% pork others use a mix. I use 10 minced fresh garlic clove that have been roasted. 2 TBL of salt. I use kosher. 1 1/2 TBL of butcher course ground black pepper. 1 TBLS of marjoram. I also add 2 TBLS of paprika. I smoke it over pecan shells for 6 hours and then hang it over night to dry even further. I smoke it again for 4 hours to get it to internal 155. I use natural casings. 35-38mm.

Good Lord Papa Tom......don't give my boy a big head........oh wait, too late...LOL.
Although to be perfectly honest, he does make some mighty fine sausage. The breakfast sausage is some of the best.....I won't be buying store bought any more.
