I'll do that but actually it is close to the one Bigwheel has posted. I dry cure with Mortons sugar cure he wet cures with Mortons Tenderquick. Either way works well and BW's way may add some moisture I might have used BW's except I still have no Fort Worth tap water......

Everybody that voted especially those that chose pastrami and chicken.
I have already posted a pictorial on doing chicken under Poultry Recipes and I'll try to do something similar for pastrami fans (like me). The pastrami is more difficult because it takes longer and temperature control is important. I should have kept the camera handy when I made this one but I didn't even intend to enter it but at the eleventh hour I decided what the heck it's a big hunk o meat and I have a camera.
