Santa Claus Fibrous Casing ???
I bought some of these to stuff and use for Christmas presents.
I made a batch of summer sausage, the same one that I always make.
Used the same method and times for soaking and stuffing.
These were 12" casings, so I stuffed with 1-1/4 pounds of meat mix.
After cooking, the casings did not stick to the meat and shrink like my others have done.
Is there a fix for this or am I stuck giving UGLY Christmas Presents?
I was thinking maybe a poach would shrink them up. Any suggestions?

Yep - I could eat the ugly ones, no problem. As a matter of fact, every time Mrs Tex makes deviled eggs to take somewhere, I always get the ugly ones. They taste good to me!

This is what I done to half fast fix the problem.
Brought a pot of water to 180F. Put the sausages in for 10 minutes. Removed to cold running water and tightened the ends up. Then air drying now.
I think my screw-up was that I couldn't keep the end tight and tie it off at the same time contributed to my problem.
If I would have brought my hog ring pliers with me, that would have not been an issue.
After the poach.
Sliced uncased log from the cleanout.
Debbie's dogs want another sample.

Dealing with cured products, they are never ugly. They are rustic! I certainly wouldn't turn one away!!

The next batch, I'm gonna try to maintain < 150F and do em on the Weber 26 then finish in a poach.

Gunny send us some of that rain. After a good wet first half the year, we fell into a dry hole. Drive out to El Paso fir Thanksgiving, and everything east of Sweetwater looked really dry. Not good news to relate, I anticipate beef herds to be further reduced come summer, with more pressure on beef prices, unless the Coastal Bend comes in w a strong wet winter.
