Ive been thinking of lately about getting into sausage making, dont have a grinder or extrude yet but will look into buying one soon hopefully.
I have this awesome recipe idea, or at least it sounds good, floating around in my head and im just dying to try it.
Its gonna be brisket and pork based, with an assortment of finely chopped onions bell peppers, garlic and such, and an array of spices that I have in mind.
Is there anything I should know as far as the dos and donts of making my own homemade sausage?

For about $200 you can get both a grinder and stuffer from Northern Tool. I have had no problems with mine over 2-1/2 years.
The has been over 1500 pounds of butts and about 12 deer go through them.
