Need Chili help ASAP

Postby Wild_Bill83 » Wed Dec 14, 2011 11:54 am

so my wife normally LOVES it when i cook chili. Here is my recipe

Ground beef or turkey, several pounds

2 large cans of ranch style beans

2 large cans of pinto beans

2 large cans of rotel

yellow, red, green bell peppers (for color)

green onion

------------------------
Seasonings - Chili powder and garlic power

i basically dump everything in a pot (I drain the canned stuff) and bring it to a boil while i brown my meat... i season the meat and dump it all in one pot and let simmer for a few hours...no measurement of seasonings just dump it in to taste.

Here is my problem...I HATE MY CHILI!!!!! lol i think its sloppy and im tired of the tatse to be honest with you.

My wife wants me to make some for her this weekend. I need a good recipe guys that wont brake the bank.... Any simple yet good ideas?
I really want to thank every one for taking time out to answer my questions. I grew up with out a dad and had no one to teach me this stuff. You are a great help!

Ground Sausage is preferred, but ground pork & turkey work too.

Instead of water use beef stock for a more robust flavor. I also like chile powder and use a LOT of it. The more the merrier. A nice, mild chile powder is best, IMO. :santa:

Here's what I do:

Crockpot CHILI RECIPE

3-1/2 Lbs. Hamburger Meat
1 Medium Onion, Chopped
2 Cloves Garlic, Minced
3 - 10 oz. Cans Tomatoes, Juice & All
6 Tablespoons Chili Powder
2 Tablespoons Ground Cumin
1-1/2 Pints Water
4 Teaspoons Salt
Hot Pepper if desired

Brown Meat in skillet. Put browned meat and all other ingredients in slow cooker. Mash with
potato masher to crush tomatoes. Cook on low about 4 hours.

I like to put a foil container under my briskets when I smoke them, I take the drippings and put them in a container and throw them in the fridge, once all the fat hardens on the top, I cut that off and freeze the rest. I use that beef stock for my chili...adds an awesome smokiness to it.

Well for starters, I would fergit the beans, rotel & bell peppers! add more chili powder, garlic & onion powder and add some cumin & salt. Little paprika for added color.

cumin is a must in chili and it's best to wait till the end to put it in cumin is what makes chile taste like chili if you put beans in it it's stew not chili but still good but still good
