Trimming Meat LSBS ??

Postby Traci » Wed Jun 01, 2011 12:51 pm

I have done a search before asking, so forgive me if this has already been answered. Can any of the meat be trimmed at home before inspection at a LSBS event? Chickens halved at home ? I have read the rules on the LSBS site and may just be overlooking

Well, that is what I was thinking, but when I spoke with someone who is over the Jefferson competition next weekend, he said no trimming ahead of time, that all meat has to be in butcher paper or cryovac packaging at inspection. I may give him a call to clarify again........

Yes you can trim all meat at home, cut chicken, ect. I am the one running jefferson next week. You cannot do any seasoning, bringing, or marinating before meet inspection. Looking forward to meeting you.

Thanks for the clarification. Must have not been a LSBS judge I spoke with, just someone over the Boys and Girls Club, the organizaton the BBQ is benefiting . This is our first competition, so I wanted to make sure anything that could be done ahead of time could be done, I am stressing about it !

ive done maybe 5 cookoffs, started last year, and never thought to ask this question. it will be so much easier to have ribs already trimmed and ready to go in marinade when you get there instead of trimming at the cookoff. i take this is ok for the IBCA also?
