Not sure if I will get an answer but here it goes.
Ok when cooking at home I was always taught to cut the brisket at a 90 angle against the grain. If I did this for a comp I think the pieces would be uneven and not look good in the presentation. What am I missing remember I have only cooked in one sanctioned event so please take it easy on me with the answers. is it ok for the seven pieces to be of different sizes? Can I trim them all to the same size after slicing or should I trim them before smoking? Thanks for any help you can give me if it is a trade secret then I understand.

You are correct, always slice brisket across the grain. In the turn in box just cascade the slices longest to shortest .....

So longest slices to the back of the box shortest to the front thanks Redneck as soon as I find out if I will still have a Job next year plan to take your class. These politicians in Austin need to quite firing us teachers. Almost makes me wish I was still a soldier.
