Colorado Green

Postby DATsBBQ » Tue Nov 30, 2010 12:01 pm

When it comes to making a pot of green there is much new under the sun. Chilies, onion, broth, pork and so forth. This recipe has a twist, well you'll see.

Start with assembling the ingredients:
IngredientsGathered.jpg

42 oz of home made chicken broth (not yougurt or guak  ), Cilantro, Oregano, garlic, white onion, pork, Hatch and Pasilla chilies, yellow bell pepper.

Chicken broth into the crock pot.
2 TBSP cumin into the crock pot.

Fire roasted the Hatch and Pasillas:

Gave them a course chop and into the crock pot

This is where twist comes in. Next I husked the Tomatillos (a pounds worth), cut out the stem and dry roasted in a cast iron (low heat) for about 25 minutes turning every 3 minutes or so. The photo is about 15 minutes in.

Then I gave them a rough chop and into the crock pot.

The Mrs isn't much on onions so I either have to give them a fine dice (so see won't see 'em  ) of leave them big enough for her to fish out. I used a half and onion with a radial cut. Into the crock pot along with two whole cloves of garlic.

Next I cored and de-seeded the bell pepper, Course chop and into the pot.
Fine chopped one half a bunch of cilantro and into the pot.
1 Tsp oregano into the crock pot.

Next up a browned the pork (1.8#) and added it to the crock.

Give all a good stir.

I'll check for heat level in a few hours. If too mild, that's the SB Chipotle Texas Dynamite will come into play.

I got a feeling its going to be smothered burritos tonight.

I'm a Big fan of the Verde and that is some good looking Verde Dave. I always put tomatillos in mine too.
Never met a cow I didn't like with a little salt and pepper.

I'd hit that
20" x 40" Party Gator Pit
Custom Mobile Stick Burner
Summerset TRL 32" Built-In Grill
Weber Q2200
48" Custom Firepit
Bertello Pizza Oven

I can't always please everybody. I'm not bacon.
