I could give you mine but then I would have to shoot you.....

JK, Me I just saute some Bell peppers, onions and garlic, then throw in my meat of choice
while the meat is cooking, I add my spice mix ( this is the part that is secret ) but you just got to find a spice mix that you like..or should I say...the judges will like.

then I add some beef or chicken broth and some tomato sauce and then adjust it to my liken

This may not be exactly what you are looking for but at least it should get you started.

This is a good source for spices

Bigoar - I'm not sure how my recipe would do at a BBQ Cookoff, but it wins all the time whens its People's Choice contests...

I would be interested to know how it goes if you use it.

I will be using my own recipe, Big Ron's Texas Chili mix this year at a few comps to see how it does. I also have plans for a CASI friendly recipe as their rules state meat and sauce only. Good Luck

Big Ron, I made chili this past Monday using your Texas chili mix and following your recipe to the "T"
It was my first time to EVER make chili.
Your chili mix just like the rest of you rubs is a very fine product.
I COOK WITH BIG RON'S RUB :D :D
