another knife story
i got drafted and sent to the infantry in Vietnam
i lived with my grandmother in Bellaire/Houston
when i got out in the field i figured out i needed a decent hunting knife
our search & destroy patrols were 30 days
i wrote my grandmother and she went down to Oshman's Sporting Goods in Meyerland, SW.Houston
and this is what the guy on the counter sold her to mail to me
it was a great knife !!
unfortunately i didn't bring it home
when i got medevaced out i handed it to my squad leader to pass on to whoever in the squad needed a good knife

OUP
my old 6" Rapala fillet knife lives as a kitchen prep knife

i have a fish "cleaning kit" that i take when i go huntin' fish ;)
i've had the cleaning board with clamp since the 60s in high school
the knife is a 8" Kershaw with the floating handle
and it has the blood line scaper built into the handle
the stiff red brush is a blood line scraper
the "blue thing" is the best scaler i have ever used
i've had the Kevlar/stainless cleaning glove since the 80s - no more accidental cuts
and an AccuSharp sharpener

my Pamlico at SanLuisPass
i grew up there. my parents bought our first beach house at Surfside in '57

i modified a catfish clip stringer with a poly rope and float for the kayak
if i'm hitting them i clip them until the bite quits
then i "un-zip" (gut) them with scizzors and throw them in my fish bag with some frozen blocks

I use a Victornox boning knife for trimmin & an Old Hickory Carbon Steel butcher knife for slicing got less than 30.00 invested in the pair. Buy the steel not the brand name. My brisket don't care it gets sliced with a 10.00 knife that cuts lie a 200.00 one. Truth be tole I could get by with a Butter knife to do my brisket slicin :texas:

Way Cool and since we're hi-jacking beerent's thread, let me add that I ?almost? got into fishing in a Kayak except my rotator cuffs kept disagreeing with me so I wade fished instead. Places like the Bolivar pocket, Anahuac Wildlife Refuge and even down at Baffin Bay one time.

I haven't been in a long long time but the peace, serenity and one on one is Awesome. At Anahuac, I have even fished with some decent size Gators laying on the Bank or floating close to shore. Only time I got nervous was walking thru the salt grass before daylight to a favorite spot that I couldn't drive to. The thought of walking up on a mama gator with eggs gave my goose bumps goose bumps.  :whiteflag:

..well...
the Victorinox boning knife arrived
and i was disappointed...
i love the shape
but.. the the blade has even less flex than my Mundail boning knife
and the handle is heavy and bulky
i don't like my Mundail near as much as my Rapala fillet knife
but i like it better than the Victorinox

i was going to mail it back
but i didn't
i decided to keep it and use it for awhile
i pass "stuff" on to nephews all the time
i'll give it a chance to grow on me
i do love the shape - to the cutting board
i just wish the blade was thinner with much more flex
and the handle wasn't so HEAVY/BULKY

i think it was $4.99 back in '67
i am now, only on my third one
it is the best kitchen knife i have ever used
it blows my $40 6" NSF boning knife in the dirt
the blade is more flexible and holds a great edge
i have a big collection of knives, including an expensive Cutco collection
and a number of commercial NSF knives
and i never use them, just my little 6" Rapala

i also have a number of different sharpeners

but since the AccuSharp came out it is all i use on my Rapala
a few good strokes and a brand new edge

I picked this thing up early this year and I have to say i have been very happy with it for brisket slicing so far. Everytime i break it out, i expect to hate it and want to replace it, but it does a good job making precise sharp slices. I dont know how long its going to last (im going to replace it with someone much cooler im sure), but for $5, i say give her a go.. :)
