Baptising My UDS
Fired up the UDS at 6 this morning and set a 14lb Choice Brisket in at 7
So far rolling steady at 225 degrees.

Update: just got back from church
The UDS has been chugging along for almost 3 hours now and holding at 250

You can see the diffuser plate in that last photo, I think.

Yes Sir there is a diffuser plate in there.
I tell you what I’m REALLY digging this UDS, I left again for 2-1/2 hours. Got back home and it’s still at 250 so I checked the brisket and it was at 170 in the point and the bark/color was right where I liked it. I just wrapped it and back on or in the barrel.
You talk about set it and forget it. I was going to get a pellet smoker for that reason only. And I tell you what I am sure glad I didn’t because so far this is the real deal. You can see I have my share of ways to cook and each serves its own purpose, but dang this UDS Has me wanting to build another one
