UDS temp

Ok I'm at a loss. Center probe temp is 100 degrees hotter than three inches from edge. Got a couple big pork butts on so what do I consider to be my temp? Was shooting for 250. Cook at 250 center probe or 250 edge prob?

with a pork butt it makes absolutely NO difference
just cook the butts till they are over 200 internal

if you were cooking some prime brisket
then you can get snooty about the temp ;)
