Spare Ribs
Should I use a water pan when making spare Ribs? I've read that it is needed and others say it is not needed in a UDS.

I use a water pan and ribs turn out great every time!!

Sunday will the big day. Gonna do couple baby back slabs. Go with a 2-1-1? Flat or rolled and skewered?

My only two absolutes on Oink Bones are Apple Wood and spritzing with Apple Juice every hour - - - other than that, the rubs and sauces just depend on who's dining or my taste buds. Good Luck and post up a pickie if you get a chance.

generally I think that using water pan is never a bad idea....It helps to keep the meat moister and avoid to obtain a dry result... Personally I use it when I smoke every type of meat and if it looks too moist I take the pan away, also at the end of cooking 30 min at high temp and you can dry until you are satisfied..
