...basic differences between the UDS and the ECB? We have the latter, thinking of getting the former.
Which holds temps better? Works better for different kinds of cooks? UDS has no water pan, right? Does that make a difference? Thanks for any clarification!

The UDS is hands down a better cooker if it is built properly. Capacity and efficiency along with stable temps make it a better choice.
True most UDS's do not have water pans or diffusers the drippings fall onto the coals. Personally I prefer a diffuser in my UDS's because I do not care for the drippings hitting the coals in smoking conditions. I have also built them with water pans. My wifes Big Orange uses a 24 quart SS pan it works great.
