I'd also say screw it and just get the thermometer first then go for a controller for more precise cooks and possibly over night cooks.
I'd obviously get a digital thermometer and was thinking maverick et733 or the 735.

I use a BBQ Guru Digi Q DX 2. Works great. Drums are very efficient even without a draft control.

Don't waste your money,You don't need one on a UDS!! Mine will stay where I park the therm needle until it runs dry the next day.
Never met a cow I didn't like with a little salt and pepper.
