Besides the fact that there wasn't much meat between the bones, they were THE BEST RIBS I EVER ATE. I love pork ribs but those beef ribs were incredible.

I LOVE MY UDS.

I am going to start looking for a good butcher in the DFW area so that I can get better cuts of ribs for next time.

Ask for a rack of flanken ribs - before they are sliced up into riblettes.

Try Matt at Local Yocal just off-square in McKinney, or Gary Hirsch's place on Parker in Plano. I hear Matatdor in Frisco is good too. In Dallas, I like Kerry's Italian in old East Dallas, and Rudolph's in Deep Ellum is a trip in the time machine.
