I finished my UDS this weekend.

Postby Girevik » Mon Sep 29, 2014 10:34 am

Here it is. I will season it this week and hope to do a pork butt this weekend. I am going to practice temp. control this week so I will be ready for the weekend.

Any tips you can give me on smoking the butt on the UDS?

Nice workmanship - if the hog knew one of his butts were going on your UDS, he would feel honored. :)

Looks great! When I cook butts, on my drum, I leave some of the fat cap on and put it on the grate, fat cap down. Other than that, i do everything the same as I do on my offset. I will say this though, The butts turn out way better on my drum than they do on my offset.

Thank you.

I fired it up last night for the first time to season it. I was able to get it up to 350 and back down to 250 without any trouble. I am really looking forward to the first cook this weekend. I will post some pictures.

I keep eyeing those "big Poppa" kits and now to see one that has been built, may have to pull the trigger.... looks like you did a good job on the assembly. :D

spacetrucker -

I really like the kit. The only thing I would do differently would be to replace the Thermometer they include with the kit. It was not reading well at all. I have a Maverick ET-733 hooked up with one probe in the meat and one clipped below the grate. The one below the grate was reading totally different than the one mounted on the side that came with the kit. At one point it was reading 200 and the Maverick was ready 278. They also include 4 bolts for the grate to sit on. I only used 3 so I wouldn't have to worry about the 4 bolts being perfectly level. With 3 bolt you don't have that problem.

It's not unusual to have around a 50 degree difference from the side to the center of a drum.
