Chunks or splits

Looking for feedback on what type of wood cut is best for a UDS. I have been buying my wood from Fruita and been using the Chunks up to this point. I noticed they say the 6" splits can be used in a UDS. Has anyone tried this or have any knowledge on this.

I use lump in my basket with chunks of wood for smoke mixed in, I usually keep the basket filled with the lump and only put a couple of chunks of wood in it. That way I get the smoke I want but not too much.

I've stood a split, on its end, in the center of my basket and it worked just fine.

Me too, I do that with mesquite when I use it on brisket.

You surround it with lump or charcoal right??? I mean you don't just use a split for your fire source alone?

That's correct surround the split with charcoal.

I use 6" splits in my charcoal basket. Couple in the center and couple on top. Depends on what I am smoking and what wood I am using. CF

Same here. I like to work up my own chunks from local woods and buy the apple and cherry already bagged. I like them to be around 4" in length and 2 to 4" thick, blockish shaped. Just makes it easier to layer in my basket. I also like to use a mix, using post oak as the standard and then adding other woods for their particular flavors, the majority of the chunks being up front (in the top section of the basket) so the smoke has an opportunity to impart flavor early (first 4 to 6 hrs for briskets and butts).

Because I use and egg and not a UDS I have to use lump charcoal... but I do mix in wood chunks as well for smoke like everyone else has stated. That being said if you choose splits or chunks, I dont think you need more than a piece or 2 to get smoke flavor.
