UDS Build question

I am going to build a UDS or two soon. My question has been asked before and I know there are different answers so I am going to ask in a little different way. I now have a masterbuilt propane cooker that I have put a CI skillet on top of the chip pan for wood chunks. The last cook I made I have 2 chickens, 2 fatties, 1 brisket fat side down in the smoker and I guess too much fat hit the coals and started a grease fire that smoked up everything and go so hot it bent the bottom rack, burnt up two digital thermometer wires, in general made a huge mess.

So my question is on a UDS build, about using some sort of diverter, clay pot tray, pizza pan whatever. For those that don't use something have you ever had a grease fire? I don't want to repeat what I just went through.

I don't have anything between the heat & the meat. Big Jim has cooked allot of butt & brisket in 4+ yrs and I never had an unwanted fire. the reason that ECB went up like a roman candle is it is drafty unlike a UDS.
Never met a cow I didn't like with a little salt and pepper.
