UDS Rib Problem
I cooked some ribs in my UDS and crisped the bottom of them up pretty good. They weren't really burnt, just ugly as heck. Would a diffuser help with this or do I simply need to flip them? I'm hoping to use the UDS for my comp ribs. So ribs being ugly is an issue. Hope someone can help.

Re: UDS Rib Problem
I don't have a UDS but my brother uses one in comps, he uses a foil turkey pan on the bottom shelf( like a defuser) and doesn't have any problems.
Cooks some excellent QUE.
Good Luck,

Re: UDS Rib Problem
I don't think he uses water,he justs put the empty pan and puts his ribs over the pan. He also foils at comps. which turns out some great ribs.
I do put water on my Weber Smoky Mountain and it cooks great as well.

Re: UDS Rib Problem
Two things 1) don't put you rack directly over the basket 2) if you have to go over the basket cook bones down and lay a strip of foil under the rack part way through the cook 2-3 hrs into it.
Never met a cow I didn't like with a little salt and pepper.
