UDS temp?

UDS temp?
I'm seasoning my just built UDS as I type. I'm running at 230* with no meat on the grill with just the ball valve wide open. How much of a decrease should I expect when I put meat on the grill. I plan on doing a couple racks of ribs tomorrow. Will it decrease even more with a larger piece of meat, say a brisket? Sorry for the newbie questions? I've been cooking on an off set smoker. Just want to get this thing dialed in. Thanks

Just be sure and leave the exhaust wide open and control air flow with the lower valve
you shouldnt loose temp once its up you should be ok and DO NOT OPEN THE LID

You might loose 20 deg if you had it stable before the meat went on just let it be it will recover and come back to where you had it. I must ask, Why cook at such a low temp? Run that puppy up to 275 and Get your BBQ on! Remember if your reading your temp off the side thermo that temp will be 40-50 deg lower than it is in the center of the Drum.
Never met a cow I didn't like with a little salt and pepper.

Thanks BluDawg. I was at 230 on the side thermo. I stuck a probe on the center of the grate and running at 268. Opened all the intakes just to see what she can do and got her up to 410*.Can't wait to get the ribs on this afternoon.
