Been toying with the idea for a while and finally got around to it. Made a little fire ring then put a foiled 13” pizza tray over. It’s about 2” from the grate. Full chimney of lit briquettes no smoking wood as I run out.

Spatchcocked a chicken and put on @300f. Around 2 hrs cook time. One picture of the coals is after the cook so I think about an hour left in the coals. Temp stayed constant at 300f easily, only had to adjust dial once.

Mods to consider. Would need a bigger fire ring to do longer cooks as there wasn’t much room for unlit coals. Any bigger cuts of meat would require a bigger diffuser as it’s just the size of a chicken.

All in all though a success which I will use again.

Good friend of mine sells something like you are doing if interested.... He also has videos on Youtube demonstrating the use.

Yea that’s exactly what I was going for. Just didn’t see that when I was looking. Thanks for sharing the website too got some good ideas from that.

I’ll see how long this lasts with it only been thin wire mesh so not expecting much then look into getting something stronger like that!

Yeah I like the idea of the hillbilly kamado but haven't took the time to make one either. I will probably eventually order one or two from him but haven't yet.
