Reverse Sear Shoulder Tender

So I've just been introduced to this cut. I've heard it refered to as Butchers Steak, Petite Tender, Shoulder Tender Medallions, & Chuck Shoulder Tender.

Went to my favorite butcher and found out he retired which is a bummer cuz this guy knew his stuff and he could slice and dice like a mad man. So I'm introduced to the new head butcher named Mike.
This guy had so much energy I'd swear he was on a Red Bull intravenous drip on HIGH.
His passion was obvious, as soon as I asked him about the Shoulder Tender cut his face lit up !
The other 3 butchers looked at each other like wth is this customer talkin bout !

Mike goes Oh Yeah, I can get you Zach Lee what you want, hold on a second.
Not even a minute later he comes walking out with the biggest hunk of beef I've ever seen draped over his shoulder.
He then shows me where he will cut the Tender from.
I didn't even ask the per lb $ , I just wanted it.
He comes out in not even 10 minutes with this beautifully trimmed piece of meat and smiles and says...THAT will be delicious especially if ur doing Medallions which was Zach Lee my plan.
Come to find out, this guy is closing in on his 45th year slicing and dicing...
Pretty kool that one great guy retires and another takes his place with even more knowledge.

Anyways, this was hit HEAVILY with Course Sea Salt and Course Pepper. Then I used a Beef Rub on top and let it sit for 6 hrs. Pulled from the fridge and set at room temp for an hour and then indirect on the Akorn at 325 til 120 internal temp.

Immediately seared over my Cast Iron Dutch Oven Lid using a mix of Butter and Coconut Oil, added some Freshly Crushed Garlic Chunks, Fresh Rosemary, Tyme, and Cilantro.
Let it sit for about 5-10 and pulled it off the heat and let it rest for 30 minutes.
Drizzled the melted Butter/Coconut Oil over the top and garnished it with the Herbs. Sliced some of it into 5/8" Medallions for a late night snack, tomorrow will be a great dinner for sure

Hands down, our new Favorite cut of Beef.
I cannot express how tender and delicious this was !!

Once again, Jaxx Drinkwater ( The Bearded Hiker ) on YouTube gives me another home run to try myself.
If anybody wants to do one of these, follow his recipe to a T and you will NOT BE disappointed, I promise you this guy knows what he's doing.

I'm already in a support group called Kodak R Us and I'm down to 6 snapshots a day. :roll:
