Drop in grills

Just curious, can a grill head for an outdoor kitchen mount be used as a table top model? Or is that crazy? I have a 5 feet long restaurant grade stainless steel table I am thinking of using as a base instead of a cart or cabinet, no drilling, just lay in on top of the able ... any thoughts?
