If I cook it on high will that put a good sear on it?

Of coarse S&P and over Lump, but I'm a firm believer in a scorching hot Cast Iron Sear followed by a 5 minute low broil about 12" away from the element.

I rarely do a sear but, if I do, I usually do just the opposite aka reverse sear - - - wonder what the difference is

I don’t know much about pellet smokers but you will need to get it as hot as you can. Depends on how thick the steaks are but I cook til done at 130 and rest 5 minutes before serving. I cook 1 inch ribeyes about 3 minutes per side on my grill. Good luck to ya.

I have never done a Hot or Fast cook on my Pit Boss so I'm moving to the spectator box.

I will preface this by saying I know NOTHING about pellet cookers but I think this technique would work. Kind of a play off Woody’s suggestion. Smoke it in your pellet grill until within about 5 degrees of your done temp, then remove it and sear it in a screaming hot cast iron skillet for a minute or two on each side.

I have one and i do steak on it.
175c, Open the grill and get that initial scorch marks on it. Close grate and cook till internal temp is 70c.
If you want super smokey flavour lower to smoke mode for 30 mins then 120c.

My Rectec Bull is pretty much a wood pellet oven. I haven't done steaks on it, because I don't see how to get the same type of sear and smoke I get from my charcoal komado with the coal basket raised up high and some lump with chunk mesquite. I got my pellet grill for indirect long cook bbq, not to replace direct heat cooking with charcoal. But I get that some people want one cooker to do everything. But I'll stick to my no compromise charcoal and wood process that yields a steak that's better than I can get in restaurants hands down, and it takes me the same or less time to smoke/grill a steak start to finish my way than a pellet grill.
I know some pellet grills I've seen have a way to reconfigure the heat deflector to allow direct cooking over the fire pot. I think Mak grils, Louisianna Grills, and Camp Chef have that feature and some of the others probably too.
