I'm new to pellet cookers, got one mainly for its steady temps after smoking in a "real" smoker... :) I'm impressed.


Smoked 11pm to 8am @210 (supersmoke setting), then wrapped and finished @250 until IT of 204. I was concerned the end result would be dry after smoking all night without a water pan or spritzing but it was as moist as any others I've done. :)
