thanks Gents :tup: I got delivery so now the work comes - - - gotta wash it "clean", trim it up and then keep chilled until it goes into the Orange Juice, Soy Sauce, SPG and Cayenne Brine/Marinade for the night. I hope to get it on the Pellet early in the morning and cook it low and slow spritzing about every 30 minutes and the bacon goes on last. When the bacon's done soze dat Gator. :tup:

Don't know for sure Sooner - - - my Podnah suggested that, when it's done, I just turn the Pit down to warm, leave the Lid open and let Folks just "pick pull and ?slice? off" what they want. After that then I'll probably just pull everything off with a fork and get ready for a large pot of Gator Gumbeaux :dont: :salut:

Same here at a Pig in the Ground Cook.

It will get a double foil bed to lie on at the end when the bacon goes on.

The Wiffy just told me that she was not getting up before daylight to take pics of me and the Gator Cook so if I needed any with me in the pic we'd better do them now.
Grrrrr got me thinking that she might just have to put her robe on and come outside before sunset.

I got in trouble for showing your original gator pick to the wife while she had a queezy stomach. She said “it’s skinned” I said “Yea, they don’t make boots out of the meat”. I’m living on the edge this weekend :) She loves fried gator tail, just bad timing.

In today's warped speed fast cyber existence that we are forced to mutate in these days, the saddest part is watching some of the older traditions, fads or rituals get tossed by the wayside and passed by.
