thanks, RMS, I too like some bark on my bonze HOWEVER, the Wife does not so that explains that
my all time favorite way is on my ECB over Kingsford and if we're having Company I usually crank'em both up

I hate eating carbon, but personally I gotta have a little bark. I was just as much curious if anybody else had tried it my way, or maybe had some tips for fine tuning that 3-2-1 process.

It's a personal thing with me, BUT? I never try and achieve a lot of bark when using my Pellet Grill - - - I have, however, found out how to get good smoke flavor and that's more important to my taste buds

It's actually easy to achieve alot of bark with a pellet smoker; just burn them to a crisp, LOL. Accidentally did that once when I got a couple of racks that were really uneven on the meat and I was rushed that day. The meaty ribs came out OK, the low meat ones were charcoal. Took away a couple of lessons from that: Be more selective in buying ribs, and no distracted grilling.
