Just go real low and slow, Outlaw. You'd be surprised how much smoke you can get into a cook if you have the time. Still probably won't be quite on the level of a stick burner, but it'll get close.
Take a look at my brisket results. That was 12 1/2 hours with the first 2 hours being at 180. It had pretty dang good flavor. A couple of of my g/f's coworkers from Texas said it was the best they had since leaving Texas.
