Some wings on the smoke daddy

Postby G8trwood » Mon Jan 22, 2018 6:02 pm

Went to get some wings for a football party and they only had frozen left :angryfire:

What the heck, filled up the new pellet pooper and started it on low to defrost them, settled right in at 179. I added the dumb looking mesh smoke square full of pellets, and it really adds to the smoke.

Up the temp to 400 after a while to put a quick crisp on them. I didn't turn or move any of the wings so I could get a better idea of hot/cold spots. The temp stability is really good, much better than a lil tex? I have used.

Here are a few pics

Looking good, I'll take 2 dozen please :)

I used to work for a restaurant supply company, serviced mostly Italian Restaurants and pizza joints.
Finding fresh wings this close to the Superbowl without refinancing ur house is a huge task.
We had one guy that ran a steakhouse/bar, he would buy about 800 lbs of jumbo wings ( 16 cases ) each year right before the AFC/NFC games.
He got smart, got them fresh from us, rinsed each one off real good, dried and then vacuum packed them after seasoning them and froze them in a dozen count each.
Sitting in that chicken juice/blood is no good. One thing I can remember all to well is the smell of chicken wings going bad in a commercial walk in .....

Sorry to drift over the double yellow, lol....

Wings are the only chicken I smoke. I always figure if I am feeding a stick burner, brisket is coming out! The pellets could open things up.

I did some burgers and slow smoked them for a half hour for flavor then threw into a hot cast iron for a salt crust on each side...of course a smoked bacon topper. :laughing7:

Those look awesome! If you want them to be nice and crispy like they were fried, add some olive oil to them before you season them and throw them on the pit. When finished they will be nice and crispy with a lot of flavor. Looking good my friend!

Put you some onions and jalapeño under those patties and then we’re talking.

I like to make onion and jalapeño straws for some crunch and flavor. Great on burgers and blackened fish tacos

OUP, it should work on a pellet pooper as long as the heat is cranked up a bit. Let us know how it works for you!
