all the Fast Eddy aka cookshack products over shoot on initial start up, don't give it a second thought, just set and forget and you'll be fine.
Most of the pellet burners they sell have an overshoot temperature circuit breaker, that will trip at a given temperature, this is a safety feature to prevent the run a way fire that becomes self feeding resulting in a total melt down. I am not sure on the PG what that temperature might be, but I do know on my FEC100 it is 400 degrees. So be mindful of it, and check on the cookshack forum. I am sure that info is there and or in the supplied user documentation. Enjoy your new PG I had a difficult time choosing between it and the one I bought, even a few calls to Eddy seemed to add confusion to my decision, they are good cooking equipment and the return guarantee along with the customer support are all good things.
