Been cookng on homemade stick burning verticals for the past 15-20 years. Decided it was time to downsize to a smaller unit and sleep at night. Went back and forth between a rec tec and a smoke daddy. Ended up with the smoke daddy. Hopefully I did okay. I did read about every thread I could find.
Always smoked a little hot, usually time wise around 8hr for butts and 9-10 for briskets. Used water pans under bottom rack to mediate temps. Oak and hickory would be the norm. Foil after bark looked good and I felt they had enough smoke. Pull at probe tender.
Have a cook coming up of a mix of butts and brisket on this little thing, any pellet smoker tips for my test cooks?
