well, C.D. I guess I just swallowed my own words "gulp" - - - walked out back to see if all was ok and 30 minutes into the cook, it's smoking like a Flathead on Kerosene and the temp is at 120 - - - sorry to be loading your thread up with my play by plays - - - I'll quit now Good Luck

No worries, glad to get the input!
I'm all done with the plate ribs (and pig sticks)..
Let it run at 220 for 7 hrs then two more at 275 as I was getting paranoid about how slow they were coming up to internal temps.
Snagged a piece or two before resting and WOW, this some tender beef rib meat!
Did four, two smaller ones and two larger, along with some Southside Market beef sausage for the wife, which also came out great..

Those look good.
Forgive my ignorance on the subject as I have ZERO experience with pellets…BUT isn't the point of the pellet pit to take temp control out of the equation?

You still have to control the temps but you do it by turning a knob to whatever temp you desire..

I bought an academy pop up tent just so my smoker is covered and also me. Helped alot when it rained. For sunny days it covers the morning and the tree from the park takes over about 1pm

A little long LOL, about three hours but it was done at 2.5, the wife wanted me to let it ride and then announced it was overcooked..
