Cookshack

Postby Gator » Wed May 30, 2007 9:41 am

For those of you who have used a Cookshack - do you get enough smoke on the meat? Do you end up with a nice bark on briskets/ribs/pork?

How did you like it?

Pluses - minuses?

Thx.

not sure about the regular cookshack smokers. But the Fast Eddie or the FEC-100 which is a pellet smoker made by cookshack, does a great job with smoke ring and nice bark. The Pellet Envy cooking class I took a few weeks back, Rod is the guys name, uses 2 FEC-100's.
He placed 7th at the great american bbq this past weekend out of 200+ teams.

I used to use a Smokin Tex which is a carbon copy of the Cookshack SM 009. You can most definately get a smoke flavor from these units. You can get a bark on the brisket and butts, but probably not like what you are used to because it is a moister cooking environment. You can definately make some good bbq with one of these units.

PROS
1. Set it and forget it. Set the thermostat and let er rip.
2. Requires very little wood. I would only use 6oz for a butt or brisket.
3. You can sleep through the night

CONS
1. Small amount of cooking space (especially SM008 & SM009) I think the shelves are 14x14.

I don't really have anything bad to say other than space. They are good little smokers.

I did look at a Cookshack and a lot of other smokers before I bought the Spicewine. :D
I didn't look at Traegers because I wanted a smoker nor a grill/smoker. The main reason I steered away from the pellet smokers was that they had to have electric to run. I wanted to be able to haul it to the park or lake or wherever, but I couldn't with the pellet smokers. They turn out great Q, which has been proven by the comp wins. I just didn't want to be dependent on having to have elec or I couldn't use the smoker. JMHO
