Saturday Boston Butt project

Postby bogiedr » Fri Jul 13, 2018 12:52 pm

Hello everyone! I am back, feeling well and ready for some smoking :chef:

Tomorrow I am smoking a 7.5 pound butt. Currently in the fridge marinating. I injected it with half a bottle of cuban / spanish mojo then rubbed well with caribbean adobo! Then I placed it in a large container and poured 1 1/2 bottles of mojo into the container.

Tomorrow I will get the Kamado Joe to 225/250, score the fat cap and add a little salt, pepper and paprika to this baby and get it in the Joe, with the bottom pan full of the marinade and fat cap up, let this baby rock for at least 8 hours, probably 10!!

Pictures after it comes out!

Hope everyone is well and looking forward to spending time here!

Sorry guys, it looked so good after 11 hours on the Joe at 235 that I got ahead of myself and forgot a photo! My wife "complained", :laughing7: that it fell apart by itself, why was she shredding it!! She laughed as she said it. I immediately got about 1 1/2 pounds set aside and made Sunday BBQ Pulled pork fettuccini ... it was awesome! I adapted Malcom Reed's recipe and it works awesomely well.
The other 5 1/2 pounds are split between neighbors and a pulled pork chili recipe I am dying to try!
Hope everyone had a great weekend

Ok, amazing what happens after two 12 year old Glenfiddich's, I had the wrong format, no wonder it would not post! Anyway, the end result of mojo pork was Sunday BBQ fettuccini!!! It was awesome!!
This weekend, a 7 1/2 lb brisket!!
