Just broke in the Monolith. Smoked some pork chops and grilled some corn and red onion. So far I love it. Learned that it is hard to bring the temperature back down.ImageImageImageImageImageImageImageImage

Once the ceramic gets heated up, it takes a while to come down. I start putting the brakes on before I reach the target temp.

Agree with Egghead. I have a Kamado Joe Classic and if I want to cook at 250 I either put on the breaks at 200 and wait half hour to reach the 250 or ... a new method, I start the lump wide open with no deflectors. As soon as it reaches 350 I put in the rack with grates and deflectors on, comes down to 225 in about 5 minutes. From there 250 in no time flat! You are going to love your Kamado, excellent and versatile rig!! Congratulations!!
